Tame the Ankylosaurus via knockout using ranged weapons. The best food is Regular Kibble, with Mejoberry as a viable alternative. Use a Bow, Crossbow, or Fabricated Sniper Rifle with Tranq Arrows or Tranquilizer Darts to sedate it. Immobilize it first with a Chain Bola or Bear Trap. You don't really need a saddle if you have Argentavis, just carry with it and it automatically gather metals.
Interestingly, Ankylo CAN gather more crystal and obsidian than your pick, but only if you manually ride it.
