Higher melee depletes the corpse faster, which can reduce total drops. All dinos get the same resource distribution from a given corpse — the difference is total drops from base damage.

Once tamed, the Equus is valued for its harvesting efficiency, collecting key resources faster than most tools. Breeding is via live birth rather than eggs, simplifying the process.
